What is Black Garlic?
Black garlic is produced by transforming regular white garlic into black through the Maillard reaction. This process involves heating whole garlic bulbs at varying temperatures over several weeks, resulting in a black interior. After processing, the garlic becomes sweet, resembling syrup with flavors similar to balsamic vinegar or tamarind. Black garlic can be used both as food for humans and as feed for shrimp and fish.
Originating in Japan, a country known for its advanced scientific research, black garlic is also known as Black Garlic in English.

Benefits of Black Garlic in Shrimp Farming
Due to its fermentation process, black garlic contains significantly higher levels of active compounds, including organic sulfur compounds, polyphenols, fructose, and particularly S-Allyl-L-cysteine (SAC), which increases 4-5 times compared to white garlic. This makes black garlic more potent than regular white garlic. While fresh garlic primarily contains alliin, it is quickly hydrolyzed by the enzyme alliinase into allicin.
Using black garlic for shrimp enhances immunity and resistance to diseases. It supports digestive health, improves nutrient absorption, and strengthens the shrimp’s muscular system.
A major challenge in shrimp farming is hepatopancreatic disease. Black garlic protects liver cells, ensures a healthy liver for the shrimp, and stabilizes their development.
How to Use Black Garlic for Shrimp and Fish
The recommended dosage of black garlic for shrimp is as follows:
Use 80g of black garlic ground into a fine powder and mix it with 1 kg of feed, or 8% black garlic for every 1 kg of feed.
Administer continuously for 50-60 days to observe significant improvements in shrimp health, weight, and immunity.
