How to Tell the Difference Between Clean Shrimp and Shrimp Injected with Impurities
Health Risks of Adulterated Shrimp:
Short-term: Food poisoning, diarrhea, digestive disorders
Long-term: Accumulation of harmful substances in the body, leading to chronic liver and kidney diseases, or even cancer
Most commonly, black tiger shrimp are adulterated. The injected substances are usually gelatin powder, starch, or ground-up low-quality shrimp mixed with water to create a thick solution that is then injected into the shrimp.
Signs of Injected Shrimp (Especially if Not Live or Frozen):
Rigid, straight body, lacking the natural curve of fresh shrimp
Swollen, firm gills, unlike the soft, flat gills of clean shrimp
Bloated body segments, especially where the head connects to the body

Detached or easily detachable head
Shrimp may appear puffed at the head, with flared spines and tail
When cooked: the shrimp releases a lot of water, the meat shrinks, becomes mushy, bland, and you may see a gelatin layer between the shell and flesh—especially near the head and gills
Expert Tip: Buy shrimp that are still alive, actively moving, or swimming. If buying frozen or non-live shrimp, inspect carefully for the signs listed above.
How to Choose Fresh, Chemical-Free Shrimp
Body: Slightly curved, firm flesh—not unusually fat or straight
Shell: Transparent, shiny, with color typical of its species. Shell should cling tightly to the meat
Head: Firmly attached to the body
Legs: Intact, firmly attached, not broken off
Eyes: Clear, bright, not cloudy or protruding
Texture: Firm and elastic when gently pressed
Surface: Not slimy, not sticky to the touch
Smell: Mild seafood aroma. Avoid if there’s any strange smell (e.g., ammonia or chlorine)
By applying these tips, you can confidently select clean, high-quality shrimp, ensuring the safety and health of your meals.
