Think Twice Before Buying These 6 Kinds of Shrimp

1. Shrimp with a Straight Body
There are two kinds of frozen shrimp: quick-frozen live shrimp and frozen dead shrimp.
Live-frozen shrimp retain muscle elasticity and naturally curl.
Dead-frozen shrimp lose elasticity and stay unnaturally straight.
Avoid shrimp with straight, stiff bodies.
  
 
2. Shrimp Frozen for Too Long
Shrimp kept in frozen storage for months often:
Lose water
Become mushy and lack nutrition
Develop strange smells due to bacterial growth
Look for signs of dryness, freezer burn, or odor.
3. Shrimp with Unusual Colors
Most fresh shrimp have grayish-green hues.
Shrimp that appear whitish may be waterlogged or spoiled.
Black shrimp likely harbor bacteria and are unsafe to eat.
Avoid any shrimp with off-colors.
4. Shrimp with Discolored Heads
Fresh shrimp heads match the color of the body.
If the head turns red or black, it’s a sign of spoilage due to poor storage.

Fresh shrimp smell mildly briny.
Sour, foul, or chemical-like smells (e.g., ammonia or chlorine) indicate spoilage or chemical soaking.
If it smells odd, skip it.
6. Shrimp Injected with Impurities
Some shrimp are injected with gelatin, starch, or foreign substances to appear bigger and fresher.
How to check:
Press gently: fresh shrimp = firm and elastic
Injected shrimp = overly firm, rubbery, unnatural feel
Peel the head: if a white, jelly-like mass appears, it’s likely adulterated
Be cautious of unusually plump shrimp with pale, too-perfect coloring.
How to Choose Safe, Fresh Shrimp
Look for shrimp with:
Slightly curved body, tight shell, firm meat
Attached head and legs, bright eyes
No slime or odd smell
  
Tail neatly folded, not spread out
For specific types:
Black tiger shrimp: shiny shell, firm texture
Pink shrimp (Tôm sắt): small size, sweet flavor, choose pinkish-white ones
White shrimp (Tôm he): still jumping, with pink-white body and green eyes
Lobster: bright greenish claws, clear shell, prefer live ones
How to Store Fresh Shrimp at Home
Remove antennae and rinse shrimp clean
Let dry, then place in food containers
Sprinkle a little white sugar and shake gently
Freeze in a cold freezer (below –18°C)
Sugar helps prevent blackening of the head and stops the shrimp from sticking together.
Use within 30 days to preserve nutrition and flavor.
